Tracy Lee Farms produces grass fed beef, Berkshire pork and some fancy chickens. On a recent trip to the farm, we noticed some soil erosion due to the heavy rains that we've been getting here in Central Florida. Tracy said she was planting peas to help combat the erosion. We asked if she took the peas to the farmer's market or sold them to local chefs when they were ready to harvest. She said that she didn't want to do that because the pigs really liked them. So when the peas are at peak fruition, Tracy rotates the pigs into that pasture so they can have a special summer treat. This is a farmer that cares deeply about her animals, and its one of the reasons we continue to do business with her. Food has a story to tell. What is the story behind your dinner tonight?
